If you ever want to feel like an old, Italian grandmother, whip up a pasta dish from scratch. It is a good feeling. You will understand the amount of love that must be poured into each and every dish. Start your marinara, make your pasta dough, cut it to dry, whip up whatever else you're going to serve with it, and viola! Buon appetito!

If you've never had fresh pasta, it is worth doing at least once. A mixer attachment makes life a whole lot easier, but you can manage with a hand crank or rolling pin if needed.

I think that this is, perhaps, the best and easiest pasta dough recipe out there. A few suggestions for you food entrepreneurs:
  1. Let the dough rest! You will think this dough is too dry. It isn't. It just needs to be wrapped in cling-wrap and left alone for an hour. Do it. You CAN wait.
  2. Substitute the olive oil for an infused oil to really give it a pop (think truffle oil). Remember, this is simply a base recipe. The possibilities are endless.
  3. Make your pasta the way you want it. But keep in mind, there are reasons pastas come in different sizes and shapes.
  4. Have fun and enjoy. Your food will always taste better with a little love mixed in.
